The Stroopie Company

Picture a thin cinnamon waffle cookie with a layer of homemade caramel in the middle, resting on top of a hot mug of coffee or tea until the caramel goes soft. That's a stroopie, The Stroopie Co.'s take on the classic Dutch stroopwafel, made in Lancaster, Pennsylvania.

The company dates back to 2008, and its mission has always reached beyond the cookie tin. The Stroopie Co. employs refugee women who have resettled in Lancaster, from countries that have included the Democratic Republic of the Congo, Myanmar, Nepal, and Syria. Applicants don't need English to get started, and English classes are part of the workday. The company has been a certified B Corp since 2016 and reinvests in the women who bake every batch.

And the cookies earn their keep. Co-owner Jennie Groff says a great social enterprise needs a great product, and the stroopies hold up their end. Hearts, pumpkins, Christmas trees, s'more kits, ice cream sandwich wafers: there's a shape for nearly every season, with a good story baked into each one.

One for the road, six for a gift, or a dozen for the office: Stroopie packs come in three sizes. Single Packs are individually wrapped for snacking on the go, party favors, or a sweet thank-you. Gift Packs hold six Stroopies, and Deluxe Packs hold 12 traditional or 10 chocolate-dipped. Choose traditional, chocolate-dipped, or chocolate-dipped with toppings like salted caramel, espresso, pecan, peppermint, marshmallow, coconut, or seasonal sprinkles. Set one over a hot cup of coffee or tea for a minute, and the caramel goes soft and gooey.
